Carlin de Paolo’s Cisterna d’Asti Superiore has its rich, harmonious flavors that bring to life its splendid terroir. Grown in Piedmont, Monferrato, Asti, and Cisterna d’Asti, the mediterranean climate and soil of compact and deep blue-gray calcareous marls that are rich in micro elements and mineral salts give this wine unique and complex characteristics. The 20 – 30 year old vines are grown at 180 – 300m above sea level and trained on Piedmontese guyot system with a density of 4,000 – 4,500 vine stocks per hectare, producing 75 quintals per hectare.
The vinification process starts in stainless steel tanks at controlled temperatures, and the wine is then matured in French oak barrels for 18 months minimum. The final maturing takes place in the bottle for a minimum of 6 months.
Intensely ruby red in the glass, Cisterna d’Asti Superiore has a bouquet that is vinous, sometimes etheral, with notes of ripe fruits enhanced by a faint hint of wood. It is rich and harmonious, which expresses the fragrance of the Croatina grape with an aftertaste of almond, raspberry, and strawberry. This wine is perfect for spicy international dishes, rich meats, and roasted dishes.
