Carlin de Paolo’s Nebbiolo grapes come from Piedmont, Monferrato, Alfieri Hills, Asti, San Damiano d’Asti, and exhibit the characteristics of their terroir from the mediterranean climate and a medium mix of calcareous and limey soil from 200 – 300m above sea level. Orange highlights and ruby red color come from this terroir and the vilification process of 1.5 years of vinification followed by 6 months of aging in the bottle.
This Nebbiolo has intense, complex, and elegant aromas with notes of violet, blackberry and raspberry, with spicy notes of black pepper and coffee. On the tongue the wine is dry, warm, soft, with the discreet presence of tannins. Carlin de Paolo recommends pairing its Nebbiolo with game, braised and roasted meats, hard and medium cheese. It is a wonderful wine that pairs with dishes from around the world.
